The Vine Room is part of the DoubleTree by Hilton’s multi-million renovation and brings together a menu inspired by the best of southern Europe with a cocktail list that would not be out of place along the Amalfi Coast.
Designed for long, sun-soaked lunches and relaxed evening dining, The Vine Room takes inspiration from the vibrant flavours and social spirit of the Mediterranean, paired with the best local produce from Tropical North Queensland.
Hilton’s 2026 Trends Report highlights that travellers are seeking spaces that foster connection and community – something The Vine Room delivers through shared Mediterranean-inspired plates, tropical flavours and an al fresco setting.
For example, diners can expect dishes that celebrate sharing, from lemon-rosemary risotto with prawn crudo and wild Daintree honey to scallops served with ’nduja and fish roe.
The drinks list continues the Mediterranean theme with a tropical twist – think refreshing spritzes alongside a carefully curated wine list featuring both Australian favourites and European classics.
Hotel general manager Sooraj Makhija said the restaurant’s design reflected the modern, easy-going elegance of Cairns itself. It was designed by Circa 2000 and built by Boscon Constructions over 11 months.
The job involved 250 people across architecture, engineering and trades. The Vine Room employs 35 ongoing hospitality jobs, including kitchen, food and beverage and maintenance.
“This brand-redefining transformation enhances the leisure experience at DoubleTree by Hilton Cairns — whether you’re lounging poolside or simply dining at The Vine Room,” Mr Makhija said.
“It proves Hilton’s confidence in Cairns as a tourism destination and our commitment to creating outstanding guest experiences while accredited with Australia’s No. 1 great place to work,” he said.
The Vine room is open daily 12pm- 8.30pm (Aperitivo hour 4pm-6pm).
